Minestrone means "soup", or more literally, "that which is served", from the word minestrare, "to serve", in Italian.  I recalled a great bowl of minestrone I had at the Dôme café in Suria KLCC, Malaysia.

Cook Time: 45 minutes

Total Time:  75 minutes


  • 3 tablespoons vegetable oil

  • 2 carrots, sliced

  • ​1 onion, peeled and chopped

  • 1 red pepper, chopped
  • 2 ripe large tomatoes, chopped

  • ​2 potatos, chopped

  • ​100g of button mushrooms, cut in half

  • ​1 can of tomato sauce (100g)

  • 200ml of vegetable stock. 

  • 200ml of water

  • ​1 teaspoon of dried oregano

  • ​salt and pepper to taste


In a large soup pot, heat the oil over medium-high heat. Sauté the onions for about 5 minutes, or until they are translucent. Add the carrots, potatoes, mushrooms. Season with salt and pepper. Add water, cover and cook for about 20 minutes, or until the potatoes are tender, stirring at least once. Add the red pepper, tomato sauce and the stock. Continue to cook for about 20 minutes. Add the oregano and adjust the seasonings to taste. 
When ready, serve with rice or pasta or bread. Enjoy!
