Potato and watercress salad

This well-balanced salad with watercress, potato and a simple white-wine vinaigrette is easy to do. If you're lucky to get your hands on some watercress, make the recipe and enjoy.

Total Time:  30 minutes


  • 2 bunches watercress, tough stems removed. 

  • 6 small cocktail potatoes (about 400g)

  • 1 Tbsp white-wine vinegar

  • 1 Tbsp olive oil

  • Salt, sugar and freshly ground pepper to taste


In a pot, combine potatoes with salt and cover with water. Cook potatoes for 15 minutes or until soft. Drain the water off the potatoes and set aside to cool off. Cut into bite-sized pieces.  

Make dressing: in a large bowl, whisk together vinegar, sugar, salt, pepper and oil until combined. 

Add watercress, potatoes to bowl with dressing. Serve. 

Now you're probably thinking why you even need a recipe for a simple dish like this as it's just so easy.
